
This week I am aiming to use up some food items that I have around already.
I'll do a gestational diabetes update sometime soon, but basically I am finding I cut back a little further than I needed to in the beginning. Using my glucose meter, I'm finding I can add back in some more carb foods, carefully, and that my energy is a little higher if I hit neither too high or too low. It's experimental, but I'm feeling much better!
Monday - Rice and pinto beans (previously slow cooked, in freezer), sour cream, guacamole (leftover); salad with red bell pepper (leftover from yesterday's lunch with guests), pepper jack cheese, ranch dressing
Tuesday - Sundried tomato pesto (will use up parsley from yesterday's lunch), Dreamfield's pasta; salad
Wednesday - Indian food - channa masala from canned items, some prepared stuff we have sitting around, and basmati rice (not too much for me!)
Thursday - Dal (using channa dal) and rice and yogurt; any leftovers from Wednesday; salad
Friday - Salmon pasta dish; salad with goat cheese (using up leftover here too)
Saturday - Homemade pasta sauce and ravioli (leftover from last week - don't want to let them get freezer burned); salad
We'll probably have Sunday dinner away from home, so that should do it!
The only things I'll need to buy this week, including for breakfasts and probably lunches, are salad, yogurt and sundried tomatoes. I'll use the extra room in my budget to stock on up some other things, as we prepare for baby.
